Basic Food Safety eStart™ introduces the learner to critical issues of safe food handling & preparation, equipping them with all the practical skills and knowledge required to be a part of the food flow process.
lesson 1: foodborne illness
Examines the extent and causes of foodborne illness, the names of the most common contaminants and the leading sources of problems.
lesson 2: personal hygiene & handwashing
Teaches personal cleanliness, the steps to proper handwashing procedures, health issues and glove use.
lesson 3: time & temperature and the food flow process
This lesson details the major wine-producing areas using animated maps and colorful illustrations. Geographic characteristics and styles are also noted here.
lesson 4: contamination & sanitation
This lesson uses video and high resolution photographs to demonstrate the correct way to open a bottle of wine and/or Champagne. Students learn how to serve wine and are taught about the correct glassware to use, how and why to decant and proper temperatures. Valuable tips to recommend and sell wine more comfortably are also shared.

Basic Food Safety eStart™is designed to educate a rotating, multi-level staff (line cooks, servers, bartenders, ware washers, grocery staff, volunteers, buffet staff, etc.). The program is fully narrated and written on an 8th grade reading level for ease of use with all employees. Each lesson is approximately 30 minutes in length. A built-in Bookmarking feature allows for the Learner to complete the course in multiple sessions, bookamrking the last page they viewed and returning to it during their next session.
There is an interactive glossary of food safety-related terms for reinforcement of key concepts as well as overviews of case studies & videos related to recent critical incidents. Constructed for the individual learner, the program’s pace and remediation are based on the trainee’s needs. Multiple learning modalities including interactive questioning, high-resolution photographs, animations and video sequences are present throughout. The program concludes with a 20-question randomized, graded assessment and personalized, printable certificate of achievement.
